In the afternoon, the light becomes warmer, and by sunset, the whole landscape turns into a painting.

What I loved most is that the hotel feels very peaceful and private. Santorini can be intense, especially in high season, with crowded viewpoints and busy streets, but at West East Suites you feel completely removed from all of that. You can enjoy the beauty of the island in total serenity, without losing the feeling of being in one of the most iconic destinations in the world.

Having our own heated private pool overlooking the caldera was something truly special. It made the experience incredibly intimate and romantic. We could wake up, step outside, and immediately be surrounded by one of the most beautiful views in Greece. During the day, it was the perfect place to relax in complete privacy, and in the evening, the atmosphere became even more magical.

The suite being on two levels also gave it a beautiful feeling of space. As the sun begins to set, the whole atmosphere becomes extremely romantic. The light, the colors, the silence, the elegance of the space: everything works together beautifully.

But what really impressed us was the food.

Fly Away is not just a beautiful restaurant with a view. It is a true culinary experience. Every dish felt special, creative, and carefully studied in every detail. The presentation was refined, the flavors were balanced, and you could really feel the attention behind each plate.

We tried the tasting menu, and it was one of those dinners where every course becomes a surprise. Each dish had its own personality, but the entire menu felt coherent and elegant. Nothing was random. From the ingredients to the plating, from the rhythm of the dinner to the wine pairing, everything felt curated with passion and precision.

I especially loved how the restaurant combines Mediterranean flavors with a creative and modern approach. It still feels connected to Greece and Santorini, but with a sophisticated twist that makes the experience feel elevated. For me, Fly Away Restaurant is a must if you stay at West East Suites, but I would also recommend it even if you are not staying at the hotel. It is the kind of place where you go not only to eat, but to live a beautiful evening.
